Spring cleaning a little early with a much needed juice cleanse:
Orange, Carrot + Ginger
Pineapple, Celery + Parsley
Cocao Mousse made from… Sweet Potato! Yes that’s right I said it. And it is delicious! Follow the recipe below for a sweet nutritional treat. Happy new moon everyone!
1 large sweet potato
2-3 tbsp cacao powder
2 tbsp agave or maple syrup
pinch of cayenne pepper
First proceed as you normally would to bake a sweet potato (350 until soft). Make sure the potato is cooked thoroughly before removing from the oven. I know this process can be a little time consuming but I promise it’s worth the wait! Once your potato has cooked, peel the skin and chop into chunks. Place chunks in a bowl and let cool down in the fridge for awhile before continuing the recipe. After the potato chunks have cooled, dump bowl into food processor. Add the remainder of the ingredients and blend thoroughly until a smooth consistency develops. Try a little spoonful to make sure it is to your liking. You may need more sweetener or more cacao. Don’t be afraid to play around with it a little until it suits you. Once you’ve perfected your mousse, place in a bowl and let chill in the fridge for at least 30 minutes. Top your mousse with berries, chia seeds, cacao nibs or nuts! And of course, enjoy :)

Good question! I would say I eat more plant based rather than vegan. There are a lot of vegan foods I would never consume (Oreos, etc). I generally eat whole, unprocessed foods such as fresh produce, nuts, seeds and grains. Xx
I think I’m just going to keep making tropical inspired everything until it’s at least 70 degrees outside. Raw Mango Pineapple Tart with a Cashew Date crust! This recipe is really simple and easy to make :)
1 cup raw cashews
1/2 cup dates
1 tbsp maca (optional)
pinch of salt
Blend the above ingredients thoroughly in your food processor. Pour mixture into a cake/pie pan and press down firmly with fingers until evenly distributed. Place in freezer.
2 tbsp coconut meat
Blend ingredients in food processor or blender until mixed into a smooth texture. Pour contents on top of crust and smooth out with utensil. Place pan in freezer overnight. Use sharp knife to file around the edge of the tart, then flip the pan over onto a flat surface (plate or cutting board). Let sit in the fridge or room temperature to defrost a bit before consuming. And of course, enjoy! Xx
